Ed. Note: ‘Tis certainly the season for all things pumpkin, and, in honor of this seasonal go-to, we enlisted Catherine McCord, prolific home cook and founder of family friendly website-turned-cookbook weelicious, to whip up a recipe just for us. The result? An unconventional and absolutely fantastic-looking savory snack, one that we will surely be giving a go over the course of the next few weeks.

 

Sweet Pumpkin Quesadilla
Serves 2

Ingredients
2 whole wheat tortillas
2 tablespoons pumpkin puree
2 tablespoons cream cheese
ground cinnamon
honey

1. Spread the pumpkin puree on one tortilla and the cream cheese on the other. Sprinkle with cinnamon and drizzle with honey to taste.
2. Sandwich the two halves together. Cook for 3 minutes on each side in a skillet over medium heat.
3. Let rest for 2 minutes, then cut into wedges and serve.
