Food Blog Deliciousness: Spoon Fork Bacon’s Australian Lamb & Sausage Rolls.


Australia Day is the Land Down Under’s version of the Fourth of July, replete with warm weather, fireworks and BBQs. What better way, then, to get our minds off the chilly NYC weather and on to happier, sunnier days ahead than by celebrating the joys of summer with the Aussies and our pals over at Spoon Fork Bacon?

We’re so happy to have been invited back to celebrate Australia Day with you all. It’s the official, national day celebrating Australia! We’re celebrating over here on the other side of the Pacific by making one of our favorite Aussie snacks: Sausage Rolls!! These rolls are exactly how they sound: a sausage mixture of sorts, rolled in a rich and flaky crust! You can cut these up and serve them as a snack or serve them up next to some mixed greens and BOOM. Dinner’s ready. The great thing about this recipe is that you literally put all the filing ingredients into a big mixing bowl, mix everything together, wrap it up in some puff pastry and stick it in the oven. We love recipes with minimal steps because it keeps things nice and easy. We’ve been very good this year with trying to keep things healthy and light, but every now and then you need to indulge in something special, and, for us, it’s this delicious, warm and savory Australian Lamb and Sausage Roll. While it’s nice to enjoy this on a chilly day to help warm you up, it’s also really nice to cut up and take on a picnic (these things hold very well!). We hope you’ll help us celebrate Australia Day by spoiling yourself with a few of these rolls!

Australian Lamb and Sausage Roll
Serves 8 to 10


1/3 cup plain bread crumbs
3 tablespoons milk
3/4 lb ground lamb
1/2 lb. mild Italian pork sausage (or any pork sausage of your choice)
1/2 yellow onion, diced
3 garlic cloves, minced
1 1/2 tablespoons tarragon, minced
1 tablespoon chives, thinly sliced
1 egg, lightly beaten
salt and pepper to taste

1 sheet puff pastry, rolled and cut into 2 4”x10” rectangles
1 egg, lightly beaten

1. Preheat oven to 425°F.

2. Place breadcrumbs and milk in a large mixing bowl and stir together. Allow mixture to sit for 5 minutes.

3. Add remaining filling ingredients and mix together until fully combined.  Season with salt and pepper. (Cook off a small piece of the meat mixture to make sure it’s flavored and seasoned to your liking.)

4. Divide the filling mixture in half and place atop one side of each sheet of puff pastry. Fold the shorter sides inward and roll until a 1/2 inch tab remains. Lightly egg wash the edge and finish rolling. Place the finished rolls onto a parchment lined baking sheet and lightly brush the rolls with egg wash.

5. Bake for 20 to 25 minutes or until golden brown and the filling has cooked through. Cut into pieces and serve.
